These Distilleries and Tasting Rooms Are Shaping the Future of Kentucky Bourbon

Lexington, KY

Innovation takes root at RD1 Spirits, a Lexington distillery whose focus extends far beyond the traditional bourbon barrel.

Originally established as Ashland Distillery in 1865, the first licensed distillery in Lexington, RD1 was revived in 2020 by a group of investors, including former University of Kentucky football coach Mark Stoops. Today, the distillery is earning attention for its creative approach to wood finishing.

While bourbon must be aged in new charred American oak barrels, RD1 experiments with a variety of finishing woods to add complexity and flavor. Under the guidance of Master Distiller Jarrad Gollihue, the team has explored finishes utilizing amburana, sandalwood, eucalyptus, teak, mulberry, sassafras, apple wood, and balsam wood. One of its most talked-about projects featured French oak staves steeped in maple syrup, creating rich flavors reminiscent of a stack of pancakes.

In 2025, RD1 expanded with a research and development distillery featuring a glass-enclosed lab, tasting room, and 800-gallon pot still. Visitors can also wander through an immersive on-site "forest" that showcases many of the woods used in the distillery's finishing experiments, creating a unique experience that connects nature, science, and whiskey.

Somerset, KY

Horse Soldier Farms combines bourbon, history, and patriotism on an impressive scale.

Founded in 2015 by former Green Berets, Horse Soldier Bourbon draws inspiration from the Special Forces soldiers who entered Afghanistan on horseback following the events of September 11, 2001. Their remarkable story inspired a bestselling book, the film 12 Strong, and ultimately one of bourbon's most distinctive brands.

This year, Horse Soldier opened its new $200 million campus in Somerset. Spanning 240 acres, the destination includes a distillery, barrel-aging warehouses, outdoor event spaces, and even a wedding chapel. Future plans include horseback riding experiences that pay homage to the founders' extraordinary journey.

The result is more than a distillery. It's a destination designed to celebrate American resilience, storytelling, and the spirit that bourbon has long represented.

Louisville, KY

Louisville continues to evolve as one of bourbon tourism's most exciting destinations.

A 2022 Kentucky law allowing distilleries to open satellite tasting rooms has sparked a wave of new experiences throughout downtown Louisville. Many of these venues come from brands with roots outside Kentucky, bringing fresh energy and creative concepts to the city's vibrant bourbon scene.

Visitors can enjoy live music inside Heaven's Door's The Last Refuge, housed within a beautifully restored historic church. At WhistlePig's The Vault, located inside a former bank building, guests can watch cocktails travel through an elaborate pneumatic tube system before arriving at the bar.

Kentucky distilleries are getting creative, too. Green River offers whiskey-and-candy pairings, creating unexpected flavor discoveries. Pursuit Spirits on Whiskey Row invites guests to bottle their own bourbon while also serving as a live recording location for the popular Bourbon Pursuit podcast. At Whiskey Thief, visitors can draw bourbon directly from a barrel using a traditional whiskey thief, creating one of the most hands-on tasting experiences available.

Together, these venues demonstrate an important shift in bourbon tourism: visitors aren't just seeking great bourbon, they're seeking memorable experiences.

Lexington, KY

Bespoken is challenging conventional ideas about whiskey maturation.

Located in Lexington's vibrant Greyline Station market, the distillery has built its reputation around creating custom and celebrity-backed whiskey brands. Its portfolio includes collaborations with actors Taye Diggs, Morris Chestnut, Harold Perrineau, and Malcolm D. Lee, as well as partnerships with music groups and collegiate athletics programs.

Founded in California in 2018 and relocated to Lexington in 2024, Bespoken uses technology-driven processes to develop flavor profiles in a fraction of the time required by traditional aging.

Instead of filling warehouses with barrels, Bespoken sources mature bourbon and utilizes specialized equipment, including flash-charred oak technology, controlled water baths, and pressure-based systems to craft unique flavor expressions. While the approach sparks debate among bourbon traditionalists, it also represents a glimpse into how innovation could influence future whiskey production.

Bardstown, KY

Few Kentucky bourbon stories are as resilient as Heaven Hill's.

After the devastating 1996 fire that destroyed the original Old Heaven Hill Springs Distillery and approximately 90,000 barrels of whiskey, the company shifted operations to Louisville's Bernheim Distillery. Nearly three decades later, Heaven Hill has returned to its Bourbon Trail roots.

In 2025, the company opened the new Heaven Hill Springs Distillery following a $200 million investment. The state-of-the-art facility is capable of producing 150,000 barrels annually, with plans for future expansion.

Beyond production, the site reflects a growing commitment to sustainability. Native grasses, pollinator habitats, and nearly 600 newly planted oak trees surround the distillery, creating a space where environmental stewardship meets bourbon craftsmanship.

As Master Distiller Conor O'Driscoll notes, the new distillery positions Heaven Hill for generations to come. After enduring fires, floods, and Prohibition, the company is once again investing in Kentucky's bourbon future.

From Lexington laboratories and Somerset destination campuses to Louisville's experiential tasting rooms and Bardstown's next-generation distilleries, Kentucky continues to evolve while honoring the traditions that built its bourbon legacy.
